Who hates bottled caesar dressing? Me! It's so far from what caesar dressing should taste like. A couple times in my life I've done the caesar thing from scratch.... raw egg yolks, anchovie paste and all. Sure, it was great, but it took a while.
So last night the hubs and I made chicken caesar salads for dinner*, and I played scientist in the kitchen to try and come up with something that tasted homemade but was Sandra Lee easy.
My measurements are so not measured, but you can play around with the consistency yourself at home!
A cup or two of Low Fat (or Fat Free) Caesar dressing - I bought the cheap Ralph's brand, $2.00 for a bottle
2 to 3 spoonfuls of Grey Poupon Dijon mustard
A couple swigs of olive oil
Cracked pepper
2 garlic cloves, minced
2 generous pinches of shredded Parmesan cheese
Combine all of the above in a bowl and whisk together to your desired consistency.
It really turns out tasting
*We did the salad for dinner thing last night, I have to say I just can't do it. No offense to all your salad eaters out there, but salads are for appetizers or side dishes, not for an entire meal. Even with creamy, fatty, oily, cheesy dressing. Nope, can't do it. It's still a salad.

ReplyDeleteI agree totally, completely, 100%, to the moon on your salad aversion. I love salads as a side or appetizer, but I just can't do it as a main course!
ReplyDeleteWhen I read how unhealthy some salads can be, I secretly smile inside.... and reaffirm that it's okay that I'd much prefer a cheeseburger. :)
I can't do salads for meals. Even with grilled chicken, I still crave *real* food about five minutes after eating it.

ReplyDeleteI completely agree about salads for meals. We try them occasionally at home with grilled chicken on top, but after I eat I start looking around for a main course. You can't fool my stomach. A salad is not dinner.
